After curing and hanging in a barn at the Madison county extension office for 3 months, the dozens of hams were ready to take home. The extension office held the event, in which participants removed the mold and extra spices that had been allowing their hams to cure, after patiently waiting for the multiple month long process.
Ag agents Amanda Sears and Lisa Adams explained that it is a long process, but it is well worth it as there is nothing quite as delicious as a cured country ham. They explained that the temperature of the barn and the humidity have to be just right, or the hams will not cure properly or could go bad. Both children and adults alike worked hard on their hams and learned about the time-tested process.
